With the new versions of AudioPoint App (Android v.1.3.0, iOS App v.2.2.0) it's possible now to configure the display order of the channels on the App.
Assigning channels names like 1-English, 2-Italian, 3-French, the channels will displayed in order as: English, Italian, French.
